2015 Week 9

 I had a new helper in the kitchen this week.
We made some banana muffins 
and my littlest guy did a great job smashing up the bananas.
The kids had Friday off and we had a fun day swimming.
Of course we followed that up with ice cream and adult beverages!

Dinners this week:
Sunday - My dad is in town so we are having dinner at my sister's house. Ribs, potato salad and asparagus are on the menu. I'm not sure what I'll be having :).
Monday - Butternut squash mac and cheese, and roasted broccoli. With fruit.
Tuesday - Dinner out with my dad.
Wednesday - Baked chicken legs, a Mediterranean quinoa salad, and fruit.
Thursday - Burrito bowls with black beans, brown rice, fajita veggies, and lots of toppings. With a yummy cilantro lime sour cream dressing.
Friday - Homemade pizza night, with a salad and fruit.
Saturday - Corn and potato chowder with a green salad and homemade bread.

2015 Week 8


Scott made this deeeelicious pizza on Friday. 
It was pear, gorgonzola, and arugula and it was so yummy.

It was restaurant week at this little lady's school this week.
So she came home ready to help with cooking, perfect!

Dinners this week:
Sunday - Pesto chicken and noodles, a spinach salad, and fresh bread. 
Monday - Kale, mushroom and tomato polenta and a fruit salad.
Tuesday - Slow cooker veggies and chickpea curry with naan and fruit.
Wednesday - Spinach, asparagus, mushroom frittata, breakfast potatoes, and fruit.
Thursday - Homemade chicken noodle soup, a salad and fruit and fresh bread.
Friday - Homemade pizza night, woohoo!
Saturday - Dinner with my dad who is in town!

2015 Week 7

Our Love day was LOVEly, thanks to this guy and his brother and sister and their dad.
Such a fun, warm day and now it's snowing!
That's Colorado for you.

Dinners this week:
Sunday - Leftover pizza and salads.
Monday - Snow day over here. We're making quinoa chili with peppers and zucchini, cornbread and berries.
Tuesday - Butternut squash mac and cheese, steamed broccoli, and fruit.
Wednesday - School board meeting night, I'm making up enchiladas to be baked off early. With black beans and fruit on the side.
Thursday - Lentil and mushroom ragu with a big spinach salad and baked bread.
Friday - Pizza and a movie family night. TGIF!
Saturday - Dinner with friends or grilling out.

2015 Week 6

We're getting ready for Valentine's Day around here!
 My little Miss has been busy making valentines to send to her grandparents.
I think we will have a fun Love Day, complete with heart shaped food, all day long.
And a little chocolate mustache added for extra measure.

Dinners this week:
Sunday - Homemade pizza night!
Monday - Kale and portobello stroganoff, with fruit and crusty bread.
Tuesday - Veggie fried rice with a fruit salad.
Wednesday - Fish sticks with sauteed zucchini and some fruit.
Thursday - Thai Peanut Noodles with tofu, served with veggies and dip.
Friday - Leftovers, or dinner with friends. 
Saturday - Heart shaped pizza with spinach salad and a yummy dessert.

2015 Week 5

Today we're hosting a Super Bowl party.
Even though our beloved Donkeys are not playing in the big game.
We're still in a state of mourning about that.
Anyway, food will help!
We're making a vegetarian chickpea lime chili,
clam chowder, and queso.
It should be fun evening!

Dinners this week:
Sunday - Game day! Soups with friends.
Monday - We have a bunch of leftovers from Sunday to eat. Tonight will be veggie soup with fresh bread and fruit.
Tuesday - Taco Tuesday! Going with my old favorite, Chipotle sweet potato and black bean tacos. With Spanish rice and fruit.
Wednesday - Crispy salmon with roasted brussels sprouts and oven fries.
Thursday - Vegetable ramen with a fruit salad.
Friday - Pizza night!
Saturday - Leftovers or dinner with friends!

2015 Week 4

 This is what happens when I try to get granola bars 
out of a pan without using parchment paper.
Lesson learned!

In other news, our fun day at the museum 
this week was exhausting for one of us!

In food news, we're still going strong with our eat more fruits and veggies work.
Again, eating more fruits has been very easy. 
Getting more veggies in takes more thought, but I think I'm getting the hang of it. 
We're also working on cutting out sugar. 
Scott and I have cut it out completely, including honey and other sweeteners.
It's really hard work.
We haven't consciously changed what the kids are eating,
but I am way more aware of what we give them.
I'm not sure where I see this experiment going, 
but I really am happy to break this little addiction for a bit.

Dinners this week:
Sunday - Leftovers. We've got a fridge full!
Monday - Mediterranean orzo salad with grilled chicken/fish and fruit.
Tuesday - Tortilla soup (from the freezer) served with chips, cheese, guacamole and a salad.
Wednesday - Grilled salmon, a quinoa salad with kale, and fruit.
Thursday - Roasted cauliflower and chick pea tacos and a green spinach salad.
Friday - Homemade pizza night with salad and fruit.
Saturday - Spaghetti night with steamed broccoli and fruit.

2015 Week 3

She's a vampire bat pirate princess, obviously!


Dinners this week:
Sunday - Shrimp and grits (we didn't get to this last week).
Monday - Goat cheese pasta with kale and lemon, fruit on the side.
Tuesday - Black bean and quinoa enchilada bake, served with chips to dip and a green spinach salad.
Wednesday - Salmon, baked, with a spicy sweet sauce. Served with a sautéed green veggie and fruit.
Thursday - Spinach and artichoke lasagna roll ups with a green salad.
Friday - Homemade pizza night, yum! With a big salad.
Saturday - Kitchen sink quesadillas, with more veggies and beans than cheese. Fruit and salad on the side.
