Blueberry Breakfast Muffins

We love muffins in this house and I try to find a good combination of
healthy, filling and yummy. 
Blueberry breakfast muffins
This recipe is very quick and easily comes together, taking longer to bake then to prepare.
The kids loved them and I loved using up those overripe bananas that have been sitting on our counter.
It's also easy to substitute ingredients in this recipe.  Applesauce for the butter or eggs, all whole wheat flour, and any fruit can be used in place of the blueberries.  
Anyway, they are awesome, give them a try!

Ingredients:
1/2 c AP flour
1/2 c whole wheat flour
1 c old fashioned oats
1/2 tsp baking powder
1/2 tsp salt
4 Tbs butter, softened
1/2 c brown sugar
2 eggs
2 very ripe bananas, smashed
1/3 c plain yogurt
1/2 tsp vanilla extract
1 c blueberries (fresh or frozen)

Directions:
1. Preheat oven to 375ยบ.
2. Place muffin liners in muffin tin.
3. Combine first 5 ingredients.
4. In another, bigger bowl, combine the butter and brown sugar and stir with a wooden spoon.
5. Add in eggs, one at a time and stir to combine.
6. Add in smashed bananas, yogurt, and vanilla and stir to combine.
7. Add dry ingredients to wet and stir just enough to not see any flour.
8. Fold in blueberries carefully.
9. Drop batter into muffin tins and bake for 22-28 min for regular sized muffins and about 10-12 min for mini muffins.

2013 Week 44

Dress up fun!

Halloween is on it's way and today we're finishing up costume work.

Dinners this week:
Sunday - Chili and cornbread with green beans.
Monday - It's going to be a cold day here, possibly snow.  I'm thinking warm stuffed shells and a big green salad.  
Tuesday - Tuesday taco night.  These pineapple and portobello mushroom tacos look tasty.  
Wednesday - Homemade chicken baked nuggets.  I'm still looking for a recipe.  With greens and a veggie protein for me. 
Thursday - Happy Halloween!  Mummy dogs are on the menu for school lunches.  Then a homemade pumpkin pizza for the kids before trick or treating and a pumpkin soup or salad for the adults (followed by a handful or two of candy!).
Friday - Breakfast for dinner, always a fav!
Saturday - Dinner with friends.

2013 Week 43

Fall fun at the farm!
Dinners this week:
Sunday - Bronco game this evening, game food is on the menu! Scott's making something yummy in the slow cooker with a big salad.
Monday - Fish and greens.
Tuesday - S and I are going out, we have a babysitter for the kids.  They are having pizza and veggies.
Wednesday - Noodles of some sort.  Maybe spaghetti with a big salad and garlic bread.
Thursday - School conferences were moved to this week.  Soup and salad on the menu.
Friday - Friday fun nachos.  On individual plates with all the toppings.
Saturday - Halloween festivities in town and an evening Buffs game mean easy comfort food tonight.  I'm doing a baked potato bar with lots of toppings.

2013 Week 42

Fall is such a beautiful time of year in Colorado.


Not just the fall leaves, but also the sun rises and sun sets.
I took these two photo with my phone one morning this week.
The sun rise was amazing, I felt so lucky to be up early enough to see it!

Dinners this week:
Sunday - Yummy looking veggie lasagna, good Sunday game day food.  
Monday - Quinoa, black bean and corn tacos, yum!
Tuesday - Butternut squash, chickpea and arugula salad.
Wednesday - Grilled fish and greens (pesto tilapia for us, fish sticks for the kids)
Thursday - L's first kindergarten conference this evening, we will need an easy dinner that can be ready at any time.  I'm going to make our favorite veggie corn chowder with fresh bread and a simple salad.
Friday - Fall Festival at school, dinner there.
Saturday - Something easy, dinner with family or pizza night at the house.

2013 Week 41

We had our first snowfall last week!
But now, it's back to the 70's, so we can't complain.  
Love that crazy Colorado weather.

I'm happy to report that dinners last week were a success.
H ate (or at least took a bite of) everything.

This week's dinners:
Sunday - We have friends coming over for the Bronco game.  I'm going to make some yummy game snacks, which will probably turn into dinner.  I'm thinking more pretzel bites with beer-cheese dipping sauce, hummus and veggies, and spicy veggie tortilla soup in the crockpot.  
Monday - Veggie curry with TJ's sauce, and homemade naan.  
Tuesday - Pesto grilled tilapia with a green veggie and brown rice/quinoa side.
Wednesday - Leftovers, or last minute grilled veg quesadillas.  
Thursday - Homemade mac and cheese with a green veggie on the side.
Friday - Soup in the crockpot.  A veggie minestrone probably.  
Saturday - Dinner out or something easy, I have no good ideas!
