Scott and I celebrated our wedding anniversary last night.
We had dinner at Acorn in Denver, then dessert at D Bar.
I had the yummiest goat cheese sun choke ravioli at Acorn.
One of the best dishes I've ever had.
Followed up by a chocolate soufflé and Nutella beignets.
Not a bad night!
Dinners this week:
Sunday - Corn and potato chowder, fresh bread, and spinach salad.
Monday - Creamy tomato and spinach pasta with asparagus and fruit.
Tuesday - Mexican casserole with corn and poblano peppers. Fruit and chips on the side.
Wednesday - Parmesan crusted salmon with brussels sprouts and quinoa salad.
Thursday - Something in the crockpot, still trying to figure that out!
Friday - Pizza night.
Saturday - Dinner with friends.
